Describe a dish you feel comfortable making. What does the finished dish look and taste like, and why do you keep returning to it?
Egg and vegetable fried rice is the meal I feel safest making, using carrots, green onions, and anything else left in the fridge. The rice is soft, but some pieces get a little crisp in the pan. I add a small amount of soy sauce, so the taste is savory without being too strong. It isn't a special meal for guests. It's the food I make when I'm hungry and tired. I like that I can change the ingredients easily. Even a small amount of leftover vegetables becomes enough for a proper meal. The important part is using rice that isn't too wet, because fresh, very soft rice can turn into a sticky lump. Once I learned that, the dish became much more reliable, and I stopped feeling that every attempt depended entirely on luck.
